I'm 34 and had my surgery 14 weeks ago today. There is no greater risk of nerve damage because of age. The only thing is that us 'oldies' don't bounce back quite as quickly so the swelling takes a bit longer to go down. There is a one in ten chance of having reduced sensation such as a small patch on your chin after surgery. The probability of this hapening is no different if you're 18 or 48.
There's no risk of losing your sense of taste. The nerves in your tongue will not be affected during surgery. I have reduced sensation in my gums at the moment but I've never had a situation in my life when I've need to be able to feel my gums so it's not really a big deal!
In terms of insurance, it seems most people on here have been covered to have their jaw surgery done but I'm in the UK so had mine free on the national health service. So long as there is a medical reason for you to have surgery, you should be covered although I know a lot of people have had to battle to get theirs covered.
Don't let your age put you off. The risks are no greater but it might take a bit longer to recover but we're only talking maybe a week or two longer, not months.
